Week 3: Light and Airy

What could be more light and airy than meringue, that wonderfully whipped concoction of whipped egg whites and sugar? These light and airy meringues were displayed behind glass at the Willow Tea Rooms in Glasgow, Scotland, when we lunched there three days ago. The Willow Tea Rooms were designed by Charles Rennie Mackintosh in 1903. The Willow remains open today to welcome visitors who want to experience the splendor of a bygone era and take tea just as they did in the same rooms and interiors 100 years ago. By the way, I do love meringue – on rhubarb custard pie, on lemonade pie, in mushroom form and just by themselves. Yum.
